Winter equals truffle season! Our own South West is the biggest producer of black truffles or black gold – however you’d like to call these beauties! Truffles are grown right throughout the South West with Manjimup being the largest producer. In fact, there are more black truffles grown in Manjimup than anywhere else in the southern hemisphere!

So, what’s the fuss about truffles, what are they and where do they grow? 

Truffle is an edible fungus that grows underground through symbiotic relationship with the roots of specific trees. When the tree and fungal filaments reach maturity, usually after about five years, truffle is produced and occurs seasonally thereafter. Sounds easy as right? Well, not really! Even if you are patient enough to wait, you still need specific trees and climate followed by crossing your fingers and hoping for the best! Got all that sorted you think? Think again as now the “fun” part starts – time to find them! Truffles grow about 20cm underground so you will need to ask for help from your four-legged friends. Truffle is only grown in a few areas of the world, which explains the heavy price tag, about $2000 per kilo and the celebrity status! Truffles have an intense and earthy scent but as for the taste, that’s harder to describe. Earthy, nutty, oaky – there are so many other words for the flavour, but nothing quite matches up. The best way to find out is to try some for yourself!
