Sausage Casserole 


Dozen beef sausages

A carrot

A sliced onion

A tablespoon of brown malt vinegar

Two tablespoons of sugar

Take a casserole dish and scatter the chopped vegetables on the base. On top of them, place some cur sausages. Take a medium jug and add the self-raising flour, Worcestershire sauce, malt vinegar, and sugar.

Add water and mix until dissolved. Now pour the mixture over the casserole dish and bake in the oven at 180 C until you see the sauce getting thickened and the sausages brown. The baking time will be an hour approximately.

Serve the dish with green vegetables and mashed potatoes.


Pumpkin and Ginger Soup


A teaspoon of olive oil

A chopped onion

Two tablespoons of ginger grated

Two cloves of garlic

A tablespoon of Indian curry powder

Four cups of cubed (or diced) pumpkin

A carrot cut into slices

Four cups of vegetable stock

Salt and pepper to taste

A teaspoon of ground coriander

A tablespoon of ground cumin

A teaspoon of paprika

A teaspoon of ground turmeric

A teaspoon of chilli powder

Take a saucepan and add oil, bring it to heat to fry garlic, ginger and onion till the onion gets transparent. Add the spices and cook for a minute or two. Then, add the vegetables and stir for two minutes.

Now add the vegetable stock and bring to boil until the vegetables get softened from boiling. Then take the saucepan off from the stove and bring the mixture to a lower temperature.

Blend all in a blender and add cream for the desired consistency. Serve warm.


Chicken Curry with Shallots


A tablespoon of peanut oil

A shallot chopped finely

A quarter of chopped white onion

Two tablespoons of butter

Two tablespoons of lemon juice

Half tablespoon of minced ginger

Half tablespoon of garlic minced

One teaspoon of garam masala

A teaspoon of chilli powder

A teaspoon of ground cumin

A bay leaf quarter cup plain yogurt

Half a cup of cream

Half a cup of milk

A cup of tomato puree

A quarter teaspoon of Cayenne pepper powder

Salt and pepper to taste

For the chicken

A tablespoon of peanut oil

Half a kg of chicken thigh in cubes

One teaspoon of garam masala

Cayenne pepper powder to taste

Fenugreek seeds to taste

Quarter a cup of cashews ground

Quarter a cup of water

Chicken Curry with Shallots - My Foodie Box



Heat oil in the pan and add curry sauce on medium to high heat. Now stir some shallots in a separate pan with butter, bay leaf, cumin, lemon juice, chilli powder, ginger, garam masala, and garlic until crisp.

Add tomato puree, cream, milk and yogurt and stir for 10 minutes. Season with salt and pepper. Add the mixture to the curry sauce and add onions.

For the chicken, heat the oil in a pan and cook chicken until brown. Add fenugreek seeds, garam masala, and cayenne. Add some sauce and reduce the liquid till the chicken turns white.

Let the chicken cook and add ground cashew nuts and water. Cook the sauce for 5 to 10 minutes. Serve warm.
