WAFFLE MONTH WITH MY FOODIE BOX

March is a waffle month and we are celebrating! International Waffle Day lands on the 25th of March and celebrates waffles and their history. A holiday that is best celebrated by eating waffles is our kind of holiday for sure! It’s a no brainer that the day has become a bit of a hit all around the world. It was originally celebrated in Sweden but now waffle lovers all over the world embrace International Waffle Day. Plug in your waffle maker and give our delicious waffle recipe a go. It’s impossible to completely understand the significance of the waffle unless a person has tried one themselves! Everyone loves waffles, especially if they are cooked to perfection: crispy on the outside with a soft, doughy center. Topped with your favourite fresh fruit, whipped cream and maple syrup, or anything else you may fancy! MY FOODIE BOX BELGIAN WAFFLES

Makes 10 waffles / prep time 10 mins / cooking time 5 mins

INGREDIENTS

2 ¼ cups (270g) all-purpose flour

1 tbsp and 1 tsp baking powder

¼ cup caster sugar

¾ tsp sea salt

1 large eggs, divided

½ cup butter, melted

2 cups milk

2 tsp vanilla extract

METHOD
  • Turn your waffle maker on!
  • In a large bowl, whisk all-purpose flour, baking powder, sea salt and half the caster sugar until well combined. Set aside.
  • Separate egg yolks and whites in medium 2 bowls. Melt butter in a small bowl.
  • To the egg yolks, add milk and vanilla. Whisk together. Stir in the melted butter.
  • Whip the egg whites and the remaining sugar together until stiff peaks form.
  • Add the egg yolk mixture to the dry ingredients and mix until almost combined. Fold in the whipped egg whites.
  • You will need about 1/3 cup of batter for each waffle. This will depend on the size of your waffle maker. Cook in a preheated waffle maker according to manufacturer’s directions.
  • Place cooked waffles on a wire rack until ready to serve so they stay crisp.
  • Serve with whipped cream, syrup and/or fresh berries on top!
COOKING TIP

Don’t over-mix the batter. It’s really just getting mixed until it comes together. If you see a few lumps don’t worry. They’ll disappear in the waffle iron.
